Kodiak Cakes Banana Chocolate Muffins
2 cups kodiak cakes buttermilk pancake mix
1 egg, beaten
2 ripe bananas, mashed
1 cup unsweetened almond milk
.5 cup semi-sweet chocolate chips (or other)
4 tbsp truvia or other stevia based sweetener
1 tsp vanilla extract
1/2 tsp cinnamon
Preheat oven to 350. Place 12 parchment paper muffin liners in a muffin pan. In a large bowl mix all wet ingredients together with a hand mixer or fork. In small bowl add the pancake mix and chocolate chips and stir. Add the dry ingredients into the large bowl with the wet ingredients and stir until combined. Transfer batter into your muffin pan. Bake at 350 for about 20 minutes. Check them after 20 minutes with a toothpick - they should be slightly moist!
Approximately 115 calories, 3 grams fat, 21 grams carbs, 6 grams sugar, 3 grams fiber, 6 grams protein per muffin. A great carb option at a meal ;)
